Because clearly neither one of us are that adorable. But more like this .
We clearly love our veggies with recipes like these: our Spiced Up 'Sparagus
So lets get to this WIAW and serve up an extra cup!
Breakfast
To be honest veggies for breakfast is one stigma we cannot get pass. Unless its in an eggy scramble or omelet. And now that we have created a new clean pancake it is going to be even harder to incorporate veggies for breakfast. This pancake is so our new go to!
Ingredients
3/4 cup egg whites
3 T Psyllium Husk
1 tsp baking powder
1 tsp cream of tartar
** mix in any thing else you desire! i normally throw in 2 droppers or liquid stevia or a packet or truvia to sweeten it up**
Makes 1 LARGE pancake!
Directions
Mix ingredients well
Let it sit for about 5 minutes to "puff up"
If you want to mix in things like berries or chocolate chips so do now!
Toss a little coconut oil on a pan and heat it up.
Cook your pancake as usual on the pan.
After about 3 minutes or so flip.
ENJOY!
Lunch
Califlower and cheese mixed with our favorite tofu noodles!
So easy it can be made in the microwave and refrigerated and reheated later at work!
Dinner
We made smokey mustard salmon our favorite veggies!
Jen loves broccoli and Ziggy loves carrots and who can resist edamama!?
