Little Green Wednesday



Jen over at Peas and Crayons has kept up with the theme of the month. So along with March Madness we've got March gets green too! So here a few mean, lean, green dishes that we've enjoyed lately in the Crazy Cooking Couple Kitchen!








Breakfast


Did you know that March 2nd was Dr. Seuss's birthday? And Seuss was his middle name. It was Theodor Seuss Geisel and for his birthday we celebrated with green eggs and ham.

Lunch
Jen is still on this sushi kick. And I finally tried sushi. Go ahead and give me a round of applause. No? Oh ok : ( But since Jen pushed herself out of her fitness comfort zone I decided to push myself out of my food comfort zone and actually try sushi. Granted it was just a cucumber roll but it is a start!








Dinner

We made "Nonna's Chicken" again. A recipe that Jen got from her grandma. We make this at least every other week because it is so darn easy not to mention delicious! We had it on a WIAW before and asked people to guess what the sauce was.  None one guess correctly... so now that you want to make Nonna's chicken we will tell you. 








Non-Food Items

Aluminum Foil
Non-Stick Spray
Baking Dish

Ingredients 
makes 2 servings

Two 4 oz chicken breasts
1/2 cup Fat Free Italian Dressing
Basil

Directions
  1. Pre-heat oven to 375.
  2. Prep dish w/ aluminum foil & spray w/ nonstick spray.
  3. Place chicken in and evenly pour on the dressing.
  4. Bake chicken breasts for about 20 minutes (or til done).
  5. Remove from oven and sprinkle with basil
  6. Enjoy!

  1. I love that you made green eggs and ham to honor Dr. Seuss! A diner in NYC was serving them for the occasion so my friend and I went there for lunch. They servers wore cat-in-the-hat hats and read us stories. It was so much fun, even though we were the only people in there over 10 years old!

  2. Green eggs, huh...pretty tricky! I would have 'greened' them another way but yours is much more colorful!

  3. Is it weird that I knew it was his birthday? Lol! Actually my niece told me because they wore crazy socks to Kindergarten on his big day.
