Wonderfully White Pizza

This blog is one that I have promised to you. It is the winner of last weeks What I Ate Weduesday from my youtube channel. So the premise of this idea?? Here goes:


Each Wednesday on youtube I will show you 3 "best of" meals that I had during some point this week. It will always be a 1 breakfast, 1 lunch, 1 dinner and maybe sometimes a snack or desert! 


You will VOTE all week long under that video for what recipe you want to see right here on the blog.


I have tweaked this recipe several times and I am giving you guys the very best one so try it out!


Non-Food Items

Aluminum Foil
Non-Stick Spray
Spoon
Measuring cups & spoons
Medium sized bowl
Baking Sheet
Frying pan
Spatula

Ingredients
(makes 1 serving)

1 low calorie tortilla (like the kind by La Factory Tortilla 100 calories or less)
1/4 cup shredded Part Skim Mozzarella Cheese
1/4 Cup Fat Free Ricotta
2 T finely chopped onions
1/4 T extra virgin olive oil (EVOO)
Italian Seasoning
Basil
Pepper
Toppings of you choice!


Directions:

1.  Pre heat oven (or toaster oven if you have one) to 425 degrees
2. Place aluminum foil on baking sheet 
3. Lightly spray sheet with non stick spray 
4. Take tortilla and bake it "naked" for aprox 3 minutes on each side til firm (but not crunchy)
5. While baking mix together the 2 cheeses
6. Spray frying pan with non-stick spray
7. Place onions in pan and fry til lightly browned
8. Once browned mix evenly in cheese combo
9. Remove tortilla from oven once firm and spread EVOO evenly on top 
10. Evenly spread cheese/onion mix on top of tortilla
11. Spice as desired

** The best way to do that is to spoon cheese on tortilla and then lightly "smash" cheese down til mostly even. This does not have to be perfect but the more even the cheese the more consistently cooked**

12. Place on any extras on top of the cheese mixture. I used broccoli & mushrooms
13. Place back in oven  until edges of pizza are crispy (aprox 5-8 minutes)
